Kombucha Gummy Candies (sweetened with honey)

This unique recipe uses Kombucha, fruit, honey, and gelatin to make a healthy version of gummy candies. If you are vegan and prefer not to use gelatin, you may substitute it with agar agar which is a seaweed-based thickening agent (use the same amount as gelatin). You can make these into any shape you’d like using various silicone molds.

Ingredients

  • 12 oz frozen or fresh organic strawberries or your favorite fruit (*Note: Avoid pineapple, mango, kiwi, papaya or guava as they contain enzymes that will break down the gelatin. Different fruits may need different amount of time to breakdown in the pan depending on how fibrous they may be so adjust accordingly)

  • 2 cups of Kombucha, flavored or unflavored

  • 3/4 cup honey

  • 6 Tablespoons ethically sourced gelatin (this is one good option) or agar agar

  • Silicone molds (I used these)

Instructions

  1. Add the fruit, honey and ½ cup of Kombucha to a medium saucepan over medium heat. Stir occasionally to break down the fruit and dissolve the honey. If using frozen fruit, this takes about 15 minutes.

  2. While the fruit and honey are heating, "bloom" the gelatin in a bit of cool or room-temperature Kombucha, to ensure a smooth and even end result. In a medium mixing bowl, sprinkle the 6 tablespoons of gelatin over 1 ½ cups of Kombucha, and whisk well until the mixture starts to thicken.

  3. Once the fruit is broken down, pour the mixture into a blender and blend until smooth.

  4. Pour the warm fruit mixture into the pitcher with the bloomed gelatin.

  5. Stir to combine until smooth. If any gelatin clumps remain, extract with a spoon before pouring into molds.

  6. Once smooth, pour the gelatin mixture into clean silicone molds. You can also use a flat bottomed dish and then cut the gummies after it sets.

  7. Place in refrigerator for at least 2 hours or longer until they are firm.

  8. Pop the gummy candies out of the molds, or if using a flat bottomed dish:

    • Drag a sharp knife around the outside to separate the edges of the gummy from the dish.

    • Gently remove/peel the layer of gelatin from the dish.

    • Place on a cutting board and use a cookie cutter or other form to create the desired shape for your gummy candies.

  9. Store in a glass dish in the fridge for up to 4 weeks.
