Sweet Potato Quinoa Patties

These sweet potato quinoa patties are a delicious treat that can be made for breakfast, dinner, or anything in between! If you want to prep ahead of time, you can bake the sweet potatoes and cook the quinoa the day before, and then mix everything together when you’re ready to eat!

Sweet potato quinoa patties

Ingredients:

  • 2 medium sweet potatoes

  • 2 cups uncooked quinoa

  • 4 eggs

  • 1 medium onion, chopped

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp paprika

  • 1 tsp sea salt

Instructions:

  1. Begin by baking the sweet potatoes. Preheat oven to 375°F. Prick holes in the potatoes. Bake until soft, turning once, about 1 hour. Cool, then peel and mash.

  2. While the potatoes are baking, cook the quinoa. Add 4 cups of water to 2 cups of quinoa and cook according to package instructions.

  3. In the meantime, combine the rest of the ingredients in a large bowl. Add the cooked quinoa and 2 cups of the mashed sweet potato (you may have extra left over).

  4. Spray a non-stick spray onto a skillet or electric griddle and turn on medium heat. When hot, form patties, place them in the skillet and flatten them a little. 

  5. Cook for 7 minutes undisturbed. Flip patties very gently with a spatula and cook for another 7-8 minutes. You want to cook them gently, so they are brown on the outside and cooked all the way through inside.

  6. Add your favorite topping, and enjoy! Dale’s favorite topping is ketchup, and I enjoy using applesauce. The photo above displays an avocado dressing.
