Homemade Fruit Juice Jello

I love jello, but I don’t like sugar, artificial sugar, or other foreign ingredients. This simple recipe has two ingredients: fruit juice and gelatin. You can use whatever fruit juice you like, but avoid pineapple, mango, kiwi, papaya or guava juice since enzymes in these fruits prevent the gelatin from setting. In this recipe, I used blueberry pomegranate V8 juice since it doesn’t have any added sugar and has a nice flavor. I use this gelatin which is flavorless and is from grass-fed cows. If you are vegan, you can substitute the gelatin for the same amount of agar agar.

Ingredients:

  • 4 cups fruit juice, divided (avoid pineapple, mango, kiwi, papaya or guava juice)

  • 2 tablespoons ethically sourced gelatin (this is one good option) or agar agar

Instructions

  1. Begin by heating up 1/2 cup of fruit juice to a boil.

  2. Meanwhile, "bloom" the gelatin in a bit of cool or room-temperature fruit juice, to ensure a smooth and even end result. In a medium mixing bowl, sprinkle the 2 tablespoons of gelatin over 1/2 cup of fruit juice, and whisk well until the mixture starts to thicken.

  3. Once the mixture is nice and thick, pour 1/2 cup of the hot (just boiled) juice over it, and whisk well to dissolve evenly. When the mixture is smooth, add in the remaining 3 cups of fruit juice, and mix well to combine.

  4. Pour the mixture into a 7x9 Pyrex dish (or similar), and place in the fridge to set for at least 2 hours. You'll know it's done when the top is firm to the touch.

  5. Slice into squares and serve immediately, or store in the fridge in a sealed container until ready to serve.
