Ginger Citrus Soba Noodles with Snow Peas and Edamame

I love noodle bowls, and this version is a nice citrusy blend of snow peas, edamame, carrots, and scallions. This is a recipe I use when I like to mix things up a bit, and it always hits the spot!

Ginger citrus soba noodles with snow peas and edamame

Ingredients:

Noodles

  • 8 ounce package of soba noodles

  • 2 cups snow peas

  • 2 cups edamame (frozen is ok, thaw before using)

  • 2 carrots, shredded

  • 1 bunch of scallions, chopped

  • Olive oil, for the pan

  • A few teaspoons of sesame seeds, for garnish

Sauce

  • Juice from approximately 1 orange (about 1/2 cup)

  • 2 Tbsp. lime juice

  • 2 Tbsp. Bragg’s aminos (or soy sauce)

  • 1 teaspoon sriracha (optional)

  • 4 tsp. minced fresh ginger

Instructions:

  1. Cook soba noodles in boiling water for 8-10 minutes.

  2. While the noodles are cooking, heat a large skillet with just a bit of olive oil. Add snow peas, edamame, and carrots and stir occasionally.

  3. Meanwhile, whisk the sauce ingredients together.

  4. Once the vegetables are cooked, add the sauce to the stir fry mixture. Simmer this until the sauce thickens slightly, then add the cooked (and drained) soba noodles and mix thoroughly.

  5. If necessary, add more Bragg’s aminos, another squeeze of orange or lime, or more sriracha to taste.

  6. Top with scallions & sesame seeds.
