Carrot, Apple, Beet, and Ginger Juice

Over the past several years, I have leaned away from using my juicer because the process of juicing removes the beneficial fiber from your fruits and veggies. Nature has created a perfect ratio of fiber, sugar, fats, and nutrients in all its foods, and I think we are silly to mess with that. However, with my ulcerative colitis, there are times when fiber is NOT my friend. During an active flare, any amount of fiber will tear up my stomach and make my symptoms worse, so juicing gives me an option of getting the beneficial nutrients from fruits and veggies without aggravating my stomach.

This is one of my favorite juices. The ingredients are:

  • 3 carrots

  • 1 beet with greens

  • 2 apples

  • 1/2 bell pepper

  • 1-2 inches of fresh ginger

Simply stick them all in your juicer, and enjoy!
