Carob Zucchini Cake (refined sugar free)

Whenever I have extra (or giant) zucchini in my summer garden, my go-to recipe is this carob zucchini cake. I prefer carob because the caffiene in chocolate keeps me up at night, and cocoa powder requires extra sweetener to counteract its bitterness.
